Many years ago I came across this tasty concoction at the breakfast bar in Jasper National Park.  I asked the waitress what was in it and put together my own version once I got home.  This is a vitamin-packed, healthy way to start the day and can be modified to your own tastes.  Must be prepared the night before.

The evening before in a large container mix the following:

• 32 oz container of Yogurt  (I use Stonyfield Fat-Free or Low-Fat French Vanilla, but you can use Plain if wanting to limit sugar intake)

• 1-1/2 to 2 cups of Quaker Quick 1-Minute Oats (the oats will expand in the yogurt overnight, so take this into consideration when deciding how much to add)

Mix the oats well into the Yogurt and stir in the following:

• 1/4 cup finely chopped walnuts (or more if you like a nuttier flavor - baking section of grocery usually carries finely chopped bags)

• 1 Apple, peeled and chopped

• Handful of blueberries, fresh or frozen (will thaw overnight)

Mix it all together, seal it up, and refrigerate overnight.  Spoon into bowls in the morning.  Approximately four servings.

Can also add a banana just before serving, or other berries when seasonal.

We eat this just about every day!
